摘要
2000年政黨輪替後「國宴走透透」與各地節慶活動等紛紛開始熱絡地辦理，促使全台各縣市蓬勃發展具深度地域性在地味文化特色之鄉土特色餐以吸引遊客，故本研究利用文件分析法探索新聞知識庫中臺灣地區報業媒體有關鄉土特色餐之報導，瞭解如何將傳統飲食昇華質變後，以時間軸、空間軸交錯標誌臺灣本土飲食文化之飲食地圖。透過深層分析思考蒐集鄉土特色餐資料後，結果發現2003至2005年之間，鄉土特色餐發展數目達到巔峰，且鄉村地區推出鄉土特色餐數目高於都會，選用食材理念強調就地取材，食材來源是植物性高於動物性。此外，特色餐命名多以主要食材名稱採直接式表達即由鄉民率性命名，同時亦結合當地產業發展具特色的餐點與節慶進行體驗行銷活動。

A Study on the Development of Speciality Cuisine via Newspapers in Taiwan

Abstract
Since the party transition in 2000, the government of Taiwan has held banquets and characteristic festivals in every village and town. Those activities have accelerated the development of speciality cuisine and have attracted more tourists. This investigation used the document analysis method to collect the relevant news reports from news database and to discover the changes of Taiwanese culture food. The results showed the local special dishes achieve the maximum amount from 2003 to 2005. Most of the dishes were created in the country, and the ingredients were adopted from local vegetation and specialty. Furthermore, those cuisines were denominated directly for the ingredients and the festivals for promotion.
